How much will I actually take home?
Frankly there is no exact answer to this question. WHY? BECAUSE.... each animal is built differently! One may have more muscle or fat or bone. Meat can be close trimmed or left with some fat on it. Cutting difference determine how much goes in the freezer. Meat can be boneless or bone-in. This will make a difference on how much meat you put in the freezer. The first 10 to14 days after slaughter you will lose 6 to7% of body weight in moisture. Yield percentages from live to dressed weight on beef is 53% to 62%. Yield percentages from dressed to Table-ready on beef is 50% to 65%.
